These are such a delicious treat and easy to use up leftovers. Many times I have these ingredients already on hand in the fridge. If you don’t have these specific ones, that’s okay, use what you’ve got! A perfect easy lunch or dinner treat for everyone.
The first component is taco seasoning: This is a must have to keep handy. You can make an even larger batch. I keep it in an old jar and with my spices. I sprinkled a bit on the chicken to spice it up a bit.

The second component and also one to keep on hand for so many delicious recipes. I whipped up some tuna potatoes the other day and some angeled “fancy” eggs the other day with it. It’s also great with my mock Raising Cane’s sauce. Here’s a video on the butter mayo and cane sauce.

The third component is the fresh milled tortillas. I just use this flatbread recipe. A wonderful friend, Teryn Robinson, told me she uses these for hamburger buns, hot dog buns, and pizza. Seriously this is my basic, go to for everything, most versatile dough recipe now. I LOVE it. I just simply rolled it thinner for doing tortillas. I like to make a huge batch on the cast iron and then I have it on hand for if we make things through the week. My children will also throw together meat and cheese roll ups, cream cheese & jam, or even an old fashioned peanut butter and jelly. They’d be great for chicken caesar wraps too. Oh the endless possibilities.

So if those are all done – see how these can be a simple, easy, go to leftover meal? Do yourself a favor when you’re cooking up a chicken and do double – leave it unseasoned and it can become multiple meals. It makes meal times less stressful.
